Tomato and cheese mini pizzas with spinach

Ingredients:

  •  2 balls of ready-made pizza dough
  •  1.5 kg tomatoes
  •  8 cloves of garlic
  •  2 packets of granulated Cagliata cheese
  •  handful of young spinach leaves
  •  500ml natural yoghurt
  •  salt and pepper to taste

Recipe step by step

  • 1. thaw the pizza dough
  • 2. wash the tomatoes and dice them
  • 3. chop finely 4 garlic cloves
  • 4. warm a little oil in a frying pan and add the garlic, fry briefly
  • 5. add the tomatoes, stew stirring for 10 minutes
  • 6. divide the dough balls into halves and form elongated pancakes
  • 7. place them on a baking tray, on baking paper
  • 8. spread the cool sauce on pizzas
  • 9. sprinkle with a layer of granulated cheese
  • 10. bake for 10 minutes at 200° C
  • 11. prepare the garlic sauce; crush four garlic cloves with salt and add yoghurt
  • 12. season to taste
  • 13. wash and dry the spinach
  • 14. after removing from the oven, arrange a few leaves of young spinach on each serving
  • 15. add a tbsp of garlic and yoghurt sauce
  • 16. serve as an addition to a soup or a snack with bowls of olives and capers
