Panini with steak, cheddar, pickled onions, mushrooms and pepper sauce
Ingredients:
- 1 panini bun
- 160 g one-minute beef steak
- 1 pickled onion
- 4 slices of Hochland Cheddar
- Handful of arugula
- 50 g oyster mushrooms and champignons
- 100 ml pepper sauce
- Salt, pepper to taste
PEPPER SAUCE
- 1 tbsp olive oil
- 1 small shallot
- 3 tbsp marinated green pepper
- 1 tbsp pepper brine
- 30 g butter
- 2 tbsp brandy
- 1 tbsp wheat flour
- 120 ml beef stock
- 120 ml 30% heavy cream
- Salt, pepper to taste
Recipe step by step
- 1. Heat the olive oil in a saucepan, add the diced shallots and green pepper.
- 2. Sauté until the onions are glazed.
- 3. Add brandy and reduce until the alcohol has completely evaporated.
- 4. Then add a tablespoon of flour and fry for a few seconds, pour in the stock and pepper brine, reduce by half.
- 5. Finally add the cream and season to taste.
- 6. Fry the steak on a hot grill for 2 minutes on each side.
- 7. Remove from the heat, season with salt and pepper and set aside for five minutes.
- 8. Meanwhile, fry the mushrooms seasoned with salt and pepper and heat the panini bun on the grill or in the oven.
- 9. Place arugula leaves on a sliced bun, top with sautéed mushrooms and then sliced steak.
- 10. Pour the warm pepper sauce over.
- 11. Top with slices of Hochland Cheddar cheese, sliced pickled onions and cover with the top half of the bun.
