Oriental cheese soup

- 200 g Hochland Cheddar & Gouda
- 100 ml coconut milk
- 80 ml chicken broth
- 1 tsp yellow curry paste
- 20 g cashew nut
- 1 cm fresh ginger
- 20 fresh coriander leaves
- 120 g chicken breasts
Recipe step by step
- 1. cook the coconut milk and chicken broth in a saucepan, then add the curry paste
- 2. add the Cheddar & Gouda cheese cubes and mix until the cheese is completely melted in the soup
- 3. grill the nuts for about 2 minutes on a dry hot pan, then place them in a bowl
- 4. in the same pan, fry the chicken strips in oil
- 5. peel the ginger and cut it into thin strips, prepare the coriander - tear the leaves off the stalks
- 6. pour the soup into bowls, add chicken, sprinkle with chopped nuts
- 7. garnish with ginger cut into thin wedges and with coriander leaves
