Burger in black bun with chicken fillet, white cheddar and marie rose sauce

Ingredients:
  •  1 bun
  •  160 g chicken breast
  •  Chicken coating
  •  2 slices of cheese
  •  Hochland Cheddar white
  •  Handful of arugula
  •  6 tablespoons of MARIE ROSE sauce
  •  3 slices of pickles
  •  1 tomato slice
BUN (recipe for 7 pcs)
  •  499 g bread flour
  •  230 ml water
  •  51 g egg
  •  40 g soft butter
  •  31 g sugar
  •  26 g milk powder
  •  11 g salt
  •  8 g instant yeast
  •  10 g cuttlefish ink
  •  1 egg yolk for brushing
  •  A pinch of sesame seeds for sprinkling
CHICKEN COATING
  •  110 g wheat flour
  •  110 g ice water
  •  1 egg
  •  1 tsp curry
  •  A handful of flour for dusting
MARIE ROSE SAUCE
  •  4 tbsp mayonnaise
  •  2 tbsp ketchup
  •  1 tbsp Worcestershire sauce
  •  1 tbsp brandy
  •  1 tbsp lemon juice
  •  Salt, pepper to taste

Recipe step by step

  • 1. Put all the ingredients for the buns in a food processor.
  • 2. Knead the mass on the first speed until everything is combined, then turn on the second speed and mix for another 5 minutes.
  • 3. Cover the kneaded dough with a cloth and set aside for 1 hour.
  • 4. After this time, take the dough out of the bowl onto the pastry board and form minibuns (120 g each), put them on a baking tray lined with parchment paper and brush the top with yolk, sprinkle with sesame seeds.
  • 5. Bake in an ovenpreheated to 205°C for 20 minutes.
  • 6. Season the washed and cleaned breast with salt and pepper.
  • 7. Make a smooth dough from flour, ice water, curry andan egg. Dip the seasoned breast lightly in the flour and then in the previously prepared dough.
  • 8. Deep fry until golden brown.
  • 9. Make a sauce with themayonnaise and the rest of the ingredients.
  • 10. Coat the halves of the cut bun with the sauce.
  • 11. Put the arugula on the bottom, then the chicken breast,slices of white Hochland Cheddar cheese, pickles and a slice of tomato.
  • 12. Cover everything with the top half of the bun.
