Tomato and cheese mini pizzas with spinach

- 2 balls of ready-made pizza dough
- 1.5 kg tomatoes
- 8 cloves of garlic
- 2 packets of granulated Cagliata cheese
- handful of young spinach leaves
- 500ml natural yoghurt
- salt and pepper to taste
Recipe step by step
- 1. thaw the pizza dough
- 2. wash the tomatoes and dice them
- 3. chop finely 4 garlic cloves
- 4. warm a little oil in a frying pan and add the garlic, fry briefly
- 5. add the tomatoes, stew stirring for 10 minutes
- 6. divide the dough balls into halves and form elongated pancakes
- 7. place them on a baking tray, on baking paper
- 8. spread the cool sauce on pizzas
- 9. sprinkle with a layer of granulated cheese
- 10. bake for 10 minutes at 200° C
- 11. prepare the garlic sauce; crush four garlic cloves with salt and add yoghurt
- 12. season to taste
- 13. wash and dry the spinach
- 14. after removing from the oven, arrange a few leaves of young spinach on each serving
- 15. add a tbsp of garlic and yoghurt sauce
- 16. serve as an addition to a soup or a snack with bowls of olives and capers
